Healthy Zucchini Bread Recipe with Oats, Honey and Agave Nectar

Anyone else enjoy spending time in the kitchen testing out new recipes? Check out my experimental Healthy Zucchini Bread recipe with Oats, Honey and Agave Nectar. This bread is made with clean ingredients that will satisfy your sweet craving without the guilt or bloat! A few gluten and sugar substitutions and you’ll be surprised with the taste!

I love to bake, but I can also be a bit of a fanatic about “eating healthy”. Yes, at times it drives my kids’ bananas, BUT nine times out of ten (as long as they don’t actually SEE what I am adding to my recipes) the response is pretty positive.

Last weekend when I was cleaning the fridge for the 100th this month and I found a lone zucchini located in the back. I decided to get it out and start mixing, well shredding and this is what I came up with! Healthy Zucchini Bread with oats, agave nectar, and applesauce

Healthy Zucchini Bread

Minus the chocolate chips that I threw in….I add them to EVERYTHING!

  • 1/2 cup oats
  • 1/2 cup of whole wheat flour
  • 1/2 cup of white flour
  • 1/4 cup applesauce
  • 1/4 cup agave nectar
  • 1 teaspoon of vanilla
  • 1 1/2 cups of shredded zucchini
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup plain greek yogurt
  • chocolate chips (as many or as few as you would like to add)

Mix well in a bowl and bake in the oven for 40 minutes at 350 degrees. Test it after 40 minutes to be sure the middle isn’t to jiggly.

This healthy zucchini bread is such a moist loaf of bread. It lasted all of a few hours in our house (mind you we have four boys at home). I chose to substitute the sugar out for agave nectar and applesauce. Honey is also a great substitute, but we always have agave nectar on hand so that is what I used.

I like to bake with a variety of different fours that have higher nutritional worth. Although most white flours may taste better to many, whole wheat and oat flour have a much higher nutritional value, so I used a little of all three types! I have found that baking with all whole wheat flour makes for a very dense bread and baking with all white flour, not so healthy! It’s all about the balance.
