Pesto Pita Pizza Bites

Ok, so Monday starts the mad rush of the kids and myself heading back to school/work. My thought was to spend my free Saturday morning experimenting in the kitchen in hopes of coming up with some quick/healthy after school snack ideas! Although I think this is a fantastic choice, I will tell you it’s not quick! Now, with substitutions it could be and maybe even a little weekend snack planning!

SNACK ATTACK

Here goes, this is how I made my Pesto Pita Pizza.

First, I made my homemade pita by adding 2 cups of oats and 1.5 cups of water to a bowl. I let mine sit for about 5 minutes before I used my Vitamix to blend it. Once blended I sprayed my pan with pam and cooked my pita. You could always save time by buying your own pita, but I really love this healthier version.

While I was making my pita, I roasted some tomatoes and garlic in the oven for about 15 minutes on 350.

I know it might be easier to grab some pesto at the store, but I enjoy making mine at home. I use a handful of basil, a handful of spinach, some walnuts, parmesan cheese, two cloves of garlic, oil and blend away.

Once everything is complete, I spread some hummus over my homemade pita (totally optional). I then spread some of my homemade pesto over the hummus. Drizzled the tomatoes and garlic over the top. Added some feta cheese and enjoyed my Saturday afternoon experiment!

I really wasn’t sure how this was going to come out, but i was super impressed when I took my first bite! YUMMY! I think it would make a DELICIOUS after school snack if it was prepped ahead of time! If not, enjoy it on a Saturday afternoon! YUM.
